"Being in the Butcher Shop business in the USA is what started my interest in custom knives. Not only for work but for every day carry as well. I began searching the thousands of different custom knife makers out there. I came across Goulder Knives on Facebook I believe. Through first glance, I was very impressed with the styles and range of hardware available. I was searching for a boning/fillet knife for work. ​Let me tell you… I had 100’s of questions. James was prompt and patient with me even while being on the other side of the globe. I was sent a selection of wood handle options and did not see “the one” immediately. I asked James about some specific colours of wood I wanted and in just a couple days he had exactly what I wanted. Even though James was building the knife for me, I felt very much a part of the process. Constant communication, up to date progress photos and the selection of materials was mostly mine.
